- 2 cups self-rising flour
- 1 tbsp onion powder
- 1 tbsp garlic
- 1 tbsp paprika
- 1/2 tbsp Tony’s seasoning
- 1 cup buttermilk
- 1/2 tsp white pepper
- 1/2 tsp salt
- 2 eggs (add in after marinated when ready to fry)
- 1 cup apricot preserves
- 1 tbsp chili sauce
- 1/4 cup honey
- 1/2 cup bourbon
- Dash sriracha
- 3 tbsp unsalted butter (for frying)
- 4 slices brioche bread
- 4 large eggs
- 1/2 cup milk
- 1 tsp almond extract (or vanilla)
- 1 tsp cinnamon
- Pinch nutmeg
- Pinch salt
Instructions
- Clean and trim the chicken thighs, then marinate them in buttermilk, salt, and white pepper for at least 30 minutes.
- Heat vegetable oil in a Dutch oven to 350°F.
- Combine flour, onion powder, garlic, paprika, and Tony's seasoning in a bowl.
- Coat each marinated chicken piece in the flour mixture and fry until golden brown (about 7 minutes per side). Let cool on a rack.
- For the sauce, simmer apricot preserves, bourbon, chili sauce, honey, and sriracha for 5–7 minutes.
- Prepare French toast by whisking eggs with milk, cinnamon, nutmeg, and salt; soak brioche slices and fry until golden.
- Assemble by placing fried chicken between two slices of French toast and drizzling with bourbon sweet chili sauce.
