  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Instructions

  1. Boil a large pot of salted water and cook the fettuccine until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium-high heat. Add chicken pieces, season with salt, pepper, and Italian seasoning. Cook until golden (6-8 minutes), then remove from pan.
  3. In the same pan, melt butter and sauté minced garlic briefly until fragrant. Return chicken to the pan to coat in the sauce.
  4. In another pan, melt additional butter and sauté remaining garlic. Gradually whisk in heavy cream and chicken broth; bring to a soft simmer.
  5. Stir in Parmesan cheese until smooth. Toss cooked pasta into creamy sauce until well-coated.
  6. Serve pasta topped with garlic butter chicken bites and garnish with parsley.
