  • 1.5 pounds baby Yukon Gold or red potatoes (halved)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine Italian seasoning, smoked paprika, salt, black pepper, and olive oil. Coat the chicken thoroughly with the mixture.
  3. Toss halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper until evenly coated.
  4. Arrange seasoned chicken in the center of a baking sheet and surround it with the potatoes.
  5. Bake for about 30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
