  • 3/4 cup sugar
  • 2 eggs
  • 1 Tablespoon lemon juice
  • Zest from 1/2 lemon
  • 3/4 cup all-purpose flour
  • 1/2 Tablespoon poppy seeds
  • For the glaze: 1/2 cup powdered sugar
  • 1 Tablespoon lemon juice
  • zest from 1/2 lemon

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare an 8×8 square pan with non-stick spray or parchment paper.
  2. In a large bowl, mix together softened butter, sugar, eggs, lemon juice, salt, and zest until well combined. Gradually add flour and mix until just combined. Gently fold in poppy seeds by hand.
  3. Pour the mixture into the prepared pan and spread evenly. Bake for 18-22 minutes until edges are brown and middle is set. Let cool completely.
  4. For the glaze, whisk together powdered sugar, lemon juice, and zest until smooth. Once bars are cooled, pour glaze over them and spread evenly.
  5. Cut into squares and serve chilled or at room temperature.
