Ingredients
- 1.5 lb skinless boneless chicken thighs
- 8 oz grape tomatoes
- 5 cloves garlic
- 5 oz fresh spinach
- 2 cups cooked jasmine rice
- 15 oz canned chickpeas
- 6 oz feta cheese
- Fresh oregano
Instructions
- Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a heavy skillet over medium heat; cook chicken for about 10 minutes until fully cooked (165°F).
- In the same skillet, add halved tomatoes, minced garlic, oregano, and salt; cook until tomatoes soften. Stir in spinach until wilted.
- Add cooked rice and chickpeas to the skillet along with lemon juice; heat through.
- Mix feta cheese with olive oil, lemon juice, and oregano in a bowl.
- Fold half of the feta mixture into the rice; add chicken slices back in to reheat and top with remaining feta.
