  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • Fresh veggies: grape tomatoes, cucumber, romaine lettuce, red onion
  • Feta cheese and tzatziki sauce for topping

Instructions

  1. Prepare the marinade by whisking olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, and pepper.
  2. Pound the chicken to about 1/2 inch thick and marinate it in the mixture for at least 30 minutes.
  3. While marinating, prepare tzatziki by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, and salt; refrigerate until serving.
  4. Cook rice or quinoa according to package instructions and chop desired veggies.
  5. Cook marinated chicken in an air fryer at 380°F for about 10 minutes or in a skillet over medium heat until golden brown and cooked through.
  6. Slice the cooked chicken and assemble bowls with rice/quinoa as the base topped with veggies, chicken slices, tzatziki sauce, feta cheese.
