  • 1 tsp black pepper
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 shallot (chopped)
  • 6 cloves garlic (minced)
  • Fresh herbs: rosemary, parsley, tarragon, cilantro, mint (totaling 1 cup)
  • Juice of 2 lemons
  • 1/4 tsp smoked paprika

Instructions

  1. Pat the steaks dry and season with half of the salt and pepper; let sit at room temperature.
  2. Preheat your grill until charcoal briquettes are hot and ashy.
  3. In a pan over medium heat, melt butter and olive oil; add chopped shallot and garlic until translucent.
  4. Stir in fresh herbs, remaining salt, pepper, lemon juice, and smoked paprika; set aside.
  5. Sear steaks on direct heat for about 4 minutes per side until charred.
  6. Transfer to indirect heat and cook for another 4 minutes per side until an internal temperature of 135°F is reached.
  7. Rest steaks for 10 minutes before slicing against the grain; serve with the herb sauce drizzled on top.
