- 3 cups broccoli florets
- 1 yellow onion, diced
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- 3 tablespoons brown sugar
- 1 cup beef broth
- 1 tablespoon peanut oil (or vegetable/olive oil)
- 2 tablespoons cornstarch + 2 tablespoons cold water
- 1–2 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1 teaspoon toasted sesame oil
- Rice for serving
Instructions
- In a small bowl, mix cornstarch with cold water; set aside. Combine beef broth, soy sauce, brown sugar, garlic, ginger, and sesame oil in another bowl; set aside.
- Heat peanut oil in a large skillet over medium heat. Add broccoli and sauté for 4-5 minutes until slightly softened; remove from pan.
- In the same skillet, cook ground beef with onions until browned. Drain excess grease and add bell peppers; cook for another minute.
- Pour in the sauce mixture and bring to a boil. Stir in the cornstarch mixture to thicken the sauce; simmer for 2-3 minutes.
- Return broccoli to the skillet and mix well before serving hot over cooked rice.
