  • 1 lb ground beef
  • 3 cups broccoli florets
  • 1 yellow onion, diced
  • 1 red bell pepper, sliced
  • 2 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 1 cup beef broth
  • 1 tablespoon peanut oil (or vegetable/olive oil)
  • 2 tablespoons cornstarch + 2 tablespoons cold water
  • 12 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil
  • Rice for serving

Instructions

  1. In a small bowl, mix cornstarch with cold water; set aside. Combine beef broth, soy sauce, brown sugar, garlic, ginger, and sesame oil in another bowl; set aside.
  2. Heat peanut oil in a large skillet over medium heat. Add broccoli and sauté for 4-5 minutes until slightly softened; remove from pan.
  3. In the same skillet, cook ground beef with onions until browned. Drain excess grease and add bell peppers; cook for another minute.
  4. Pour in the sauce mixture and bring to a boil. Stir in the cornstarch mixture to thicken the sauce; simmer for 2-3 minutes.
  5. Return broccoli to the skillet and mix well before serving hot over cooked rice.
