  • ⅓ cup melted coconut oil
  • ½ cup honey or maple syrup

  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine-grain sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
  2. In a large bowl, whisk together melted coconut oil and honey until combined. Add eggs and mix well.
  3. Stir in milk, baking soda, cinnamon, salt, and grated zucchini until incorporated.
  4. Gently fold in the flour until just combined; avoid overmixing.
  5. Pour batter into the prepared loaf pan and sprinkle with additional cinnamon if desired.
  6. Bake for 55–60 minutes or until a toothpick comes out clean from the center.
  7. Allow to cool before slicing.
