Ingredients
- 1 ½ cups grated zucchini
- 1 ¾ cups whole wheat flour
- ⅓ cup melted coconut oil
- ½ cup honey or maple syrup
- 2 eggs (or flax eggs for vegan)
- ½ cup milk (or non-dairy alternative)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon fine-grain sea salt
Instructions
- Preheat oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
- In a large bowl, whisk together melted coconut oil and honey until combined. Add eggs and mix well.
- Stir in milk, baking soda, cinnamon, salt, and grated zucchini until incorporated.
- Gently fold in the flour until just combined; avoid overmixing.
- Pour batter into the prepared loaf pan and sprinkle with additional cinnamon if desired.
- Bake for 55–60 minutes or until a toothpick comes out clean from the center.
- Allow to cool before slicing.
