  • 35 pound boneless beef chuck roast
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 pound baby red potatoes
  • 4 large carrots, chopped
  • 1 large yellow onion, diced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season the roast with salt, onion powder, garlic powder, and black pepper.
  2. Sear the roast in the Instant Pot on Sauté mode until browned on all sides.
  3. Deglaze the pot with beef broth and Worcestershire sauce.
  4. Return the roast to the pot and add potatoes, carrots, and onions.
  5. Pressure cook on High for 60-90 minutes based on roast size.
  6. Allow natural pressure release for 10 minutes before quick releasing any remaining steam.
  7. Shred the meat and make gravy by whisking cornstarch slurry into the cooking liquid until thickened.
