Ingredients
- 4 large baking potatoes
- 9 oz cooked & chopped bacon
- 5.3 oz grated cheddar cheese
- 5.3 oz cream cheese
- 3 fresh jalapeños, deseeded & finely diced
- 2 tbsp butter
- Garlic powder, salt & black pepper to taste
- Olive oil
Instructions
- Preheat oven to 356°F (180°C).
- Stab each potato with a fork, coat with olive oil, and season with salt and pepper. Bake directly on a baking sheet for 60-70 minutes until fork-tender.
- Allow potatoes to cool slightly; slice off the tops and scoop out most flesh into a bowl.
- In the bowl, mix scooped potato flesh with cream cheese, garlic powder, butter, salt, pepper, cheddar cheese, and bacon.
- Stuff filling back into potato skins and top with remaining cheddar cheese and jalapeños. Bake at 430°F (220°C) for an additional 15 minutes until cheese is bubbly.
- Serve warm with sour cream and fresh chives.
