Ingredients
- 4 large baking potatoes
- 9 oz bacon, cooked & chopped
- 5.3 oz cheddar cheese, grated
- 5.3 oz cream cheese
- 3 fresh jalapeños, deseeded & finely diced
- 2 tbsp butter
- Garlic powder, salt & black pepper to taste
- Olive oil as needed
- Sour cream & fresh chives for serving
Instructions
- Preheat the oven to 356°F (180°C). Prick each potato with a fork, coat with olive oil, and season with salt and pepper. Bake for 60–70 minutes until golden and tender.
- Cool slightly, slice off the tops, and scoop out the flesh while leaving sturdy walls.
- In a bowl, mix the scooped potato with cream cheese, garlic powder, butter, salt & pepper. Stir in bacon bits, cheese, and jalapeños.
- Fill potato skins with the mixture. Top with remaining cheese and jalapeños. Bake at 430°F (220°C) for about 15 minutes until crispy.
- Serve hot topped with sour cream and chives.
