  • 1 cup raspberries (fresh or frozen)
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 3 cups all-purpose flour
  • ⅔ cup warm dairy-free milk
  • ½ cup vegan butter
  • 3 tablespoons sugar
  • instant dry yeast
  • cinnamon
  • nutmeg
  • pinch of salt

Instructions

  1. Make the jam by combining raspberries, sugar, cornstarch, and water in a saucepan over medium heat. Simmer until thickened, then set aside.
  2. In a mixing bowl or stand mixer, combine flour, warm milk, vegan butter, sugar, yeast, spices, and salt. Knead until smooth and let rise for 1 hour.
  3. Roll out the dough and spread cooled jam on top. Roll into a log, twist it together, and place in a loaf tin to rise again.
  4. Bake at 340°F (170°C) for 30–40 minutes until golden brown.
  5. Prepare the optional glaze while baking by dissolving sugar in water and drizzle over the babka while warm.
