Ingredients

  • 4 cups water
  • 2 tbsp Kashmiri green tea (or other green tea)
  • 1/2 tsp baking soda
  • 12 star anise
  • 2 crushed cardamom pods
  • 1 cinnamon stick
  • 1/4 tsp salt
  • 2 cups whole milk
  • Sugar or honey to taste
  • Crushed nuts (optional)

Instructions

  1. Bring water to a boil in a saucepan. Add green tea and boil for 5 minutes.
  2. Stir in baking soda; the water will turn deep red. Boil for another 2 minutes.
  3. Add star anise, crushed cardamom pods, and cinnamon stick. Boil for an additional minute.
  4. Reduce heat and simmer the chai for 20-30 minutes until reduced by half.
  5. Stir in salt for flavor balance.
  6. Add whole milk and bring to a boil while stirring constantly until the tea turns pink.
  7. Strain into cups to remove spices and leaves.
  8. Sweeten with sugar or honey, garnish with crushed nuts if desired, and serve hot.
