  • 12 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes (do not drain)
  • 1 (15-ounce) can tomato sauce or tomato puree
  • 3 ounces tomato paste
  • 4 cups chicken broth
  • 12 cups water (or more as needed)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt (or more to taste)
  • Black pepper, to taste
  • 8 ounces bowtie pasta (uncooked)
  • ½ cup ricotta cheese
  • 2 ounces mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, shaved, shredded, or grated
  • ¼ cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat.
  2. Sauté ground beef with diced onions and minced garlic until browned. Drain excess fat if needed.
  3. Stir in diced tomatoes (with juice), tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, pepper, and uncooked pasta.
  4. Bring to a boil over high heat; then reduce to medium and simmer for 10-15 minutes until pasta is cooked.
  5. Adjust consistency with water or broth as needed.
  6. Serve hot with desired toppings.
