- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup buttermilk, room temperature
- 2 tablespoons lemon zest
- ½ cup lemon juice (about 3–4 lemons), room temperature
- 1½ cups fresh blueberries
- 1 tablespoon all-purpose flour (to toss with blueberries)
- 8 oz full-fat brick cream cheese, softened
- ½ cup unsalted butter, softened
- 3½ cups confectioners’ sugar
- 1 tablespoon heavy cream
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (177°C). Grease three 8-inch round cake pans and line with parchment paper.
- In a large bowl, cream softened butter and sugars until light and fluffy. Mix in oil, followed by eggs and vanilla.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually combine with wet ingredients; add buttermilk, lemon zest, and lemon juice until just mixed.
- Toss blueberries with flour, then gently fold into batter.
- Divide batter among pans and bake for 22-26 minutes or until toothpick comes out clean. Cool completely before frosting.
- Beat cream cheese and butter until smooth; gradually add confectioners’ sugar, cream, vanilla, and salt until fluffy.
- Assemble the cake by frosting between layers and on top and sides. Chill for at least 45 minutes before slicing.
