  • ½ teaspoon salt
  • ¾ cup buttermilk, room temperature
  • 2 tablespoons lemon zest
  • ½ cup lemon juice (about 34 lemons), room temperature
  • 1½ cups fresh blueberries
  • 1 tablespoon all-purpose flour (to toss with blueberries)
  • 8 oz full-fat brick cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3½ cups confectioners’ sugar
  • 1 tablespoon heavy cream
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (177°C). Grease three 8-inch round cake pans and line with parchment paper.
  2. In a large bowl, cream softened butter and sugars until light and fluffy. Mix in oil, followed by eggs and vanilla.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually combine with wet ingredients; add buttermilk, lemon zest, and lemon juice until just mixed.
  4. Toss blueberries with flour, then gently fold into batter.
  5. Divide batter among pans and bake for 22-26 minutes or until toothpick comes out clean. Cool completely before frosting.
  6. Beat cream cheese and butter until smooth; gradually add confectioners’ sugar, cream, vanilla, and salt until fluffy.
  7. Assemble the cake by frosting between layers and on top and sides. Chill for at least 45 minutes before slicing.
