  • 1/2 cup unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 10 ounces lemon curd (store-bought or homemade)
  • Whipped cream, for serving

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. Beat softened cream cheese and sugar until smooth, then add eggs one by one, followed by lemon juice and zest.
  4. Pour mixture over crust in the pan and bake in a water bath for 1 hour 30 minutes at 300°F (149°C).
  5. Cool in the oven slowly before refrigerating overnight.
  6. Remove from pan, spread warmed lemon curd on top, and garnish with whipped cream before serving.
