- 1 cup butter (room temperature)
- 2 cups sugar
- 2 tablespoons lemon zest
- 2 large eggs (room temperature)
- 3 cups all-purpose flour
- 1 cup lemon juice (for curd filling)
- 3 egg yolks (for curd filling)
- 3/4 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1½ tablespoon corn starch
- 1/4 cup butter (cold and cubed)
Instructions
- Cream together the room-temperature butter and sugar until fluffy. Mix in lemon zest, eggs, and vanilla until well combined.
- Whisk together flour, salt, baking powder, and baking soda in a separate bowl. Gradually add to the wet mixture on low speed until just combined.
- Chill dough for 30 minutes in the refrigerator.
- Preheat oven to 350°F (175°C).
- Scoop chilled dough onto lined baking sheets. Press down in the center to form an indentation.
- Bake for about 10 minutes until lightly golden around the edges.
- While cooling, prepare lemon curd by whisking lemon juice, egg yolks, sugar, corn starch, and zest in a saucepan over medium heat until thickened. Stir in cold butter until melted.
- Once cookies are cool, fill each indentation with lemon curd.
