  • 2 medium zucchini
  • 2 medium yellow squash
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese (divided)
  • 1/2 cup coarsely grated Parmesan cheese (plus extra for topping, optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare an 8" x 8" or 8" x 11" baking dish with olive oil or non-stick spray.
  2. Slice the zucchini and yellow squash into half-moons. Chop the fresh basil and slice the green onions.
  3. In a large mixing bowl, combine the zucchini, yellow squash, basil, green onions, thyme, garlic powder, half of the mozzarella, Parmesan cheese, salt, and pepper. Mix well to coat.
  4. Spread the mixture evenly in the prepared baking dish and bake uncovered for 25-30 minutes until tender.
  5. Remove from the oven and sprinkle remaining mozzarella on top; return to the oven for another 10-15 minutes until bubbly and golden.
  6. Serve hot as a side dish or light main course.
