Ingredients
- 2 medium zucchini
- 2 medium yellow squash
- 4 tablespoons chopped fresh basil
- 2 tablespoons thinly sliced green onion
- 1/2 teaspoon dried thyme
- 3/4 teaspoon garlic powder
- 1 cup grated mozzarella cheese (divided)
- 1/2 cup coarsely grated Parmesan cheese (plus extra for topping, optional)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat the oven to 350°F (180°C) and prepare an 8" x 8" or 8" x 11" baking dish with olive oil or non-stick spray.
- Slice the zucchini and yellow squash into half-moons. Chop the fresh basil and slice the green onions.
- In a large mixing bowl, combine the zucchini, yellow squash, basil, green onions, thyme, garlic powder, half of the mozzarella, Parmesan cheese, salt, and pepper. Mix well to coat.
- Spread the mixture evenly in the prepared baking dish and bake uncovered for 25-30 minutes until tender.
- Remove from the oven and sprinkle remaining mozzarella on top; return to the oven for another 10-15 minutes until bubbly and golden.
