  • 1 roasted red pepper
  • 67 artichoke hearts
  • 1/2 cup fresh dill
  • 1/2 cup fresh parsley
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 tbsp honey or maple syrup

Instructions

  1. In a large mixing bowl, combine the drained butter beans, sliced red onion, chopped olives, roasted red pepper, artichokes, dill, parsley, lemon zest, and kosher salt. Mix gently.
