  • 1 pound extra large shrimp, peeled and deveined
  • 12 oz gluten-free penne
  • ½ cup sun-dried tomatoes, diced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons butter
  • Fresh basil for garnish

Instructions

  1. Cook gluten-free penne according to package directions until al dente; drain.
  2. In a mixing bowl, season shrimp with smoked paprika, Italian seasoning, salt, and pepper.
  3. Heat sun-dried tomato oil in a large skillet over medium heat; cook shrimp until pink and opaque (about 2 minutes per side). Remove from skillet.
  4. In the same skillet, melt butter and sauté garlic and onion until fragrant. Add sun-dried tomatoes, tomato paste, Italian seasoning, paprika, salt, and dried basil; cook for about 2 minutes.
  5. Stir in gluten-free flour; gradually add vegetable broth and heavy cream. Cook until thickened.
  6. Mix in spinach until wilted; add parmesan cheese until melted.
  7. Combine drained pasta and shrimp with the sauce; toss gently to coat.
  8. Serve garnished with fresh basil.
