- 1 1/2 cups granulated sugar
- 3/4 cup all-purpose flour
- 2/3 cup unsweetened cocoa powder, sifted
- 1/2 cup powdered sugar
- 1/2 cup dark chocolate chips, chopped
- 1/2 tsp fine salt
- 2 large eggs, room temperature
- 1/4 cup vegetable or canola oil
- 1/4 cup unsalted butter, melted
- 2 Tbsp water
- 1 tsp vanilla extract or vanilla bean paste
- 1/2 cup heavy whipping cream, room temperature
- 2/3 cup dark chocolate chips
- 2 Tbsp unsalted butter, room temperature
- 1 Tbsp light corn syrup – optional
- 1/4 tsp fine salt
- Flaky sea salt – garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- For the shortbread base: Mix together sweetened condensed milk, butter, brown sugar, corn syrup, vanilla extract, and salt until smooth. Fold in flour and powdered sugar; press into the baking pan and bake for 15 minutes.
- For the brownie layer: Cream butter and granulated sugar, then mix in eggs one at a time along with oil and vanilla extract. Combine dry ingredients separately and gradually add to the wet mixture. Pour over the baked shortbread layer and bake for another 25-30 minutes.
- For the ganache: Heat heavy cream until simmering, then stir in dark chocolate chips until melted. Add butter and optional corn syrup; mix well.
