Description

Mini Strawberry Ice Cream Pies are the perfect summer dessert, combining the fresh sweetness of strawberries with creamy vanilla ice cream, all nestled in a buttery graham cracker crust.


Ingredients

  • 15 graham crackers
  • ½ cup unsalted butter, melted
  • 2 pounds strawberries, hulled and quartered
  • ⅓ cup granulated sugar
  • 4 large scoops vanilla ice cream
  • 1½ teaspoons pure vanilla extract

Instructions

  1. Preheat oven to 350°F and place mini pie pans on a baking sheet.
  2. In a food processor, pulse graham crackers into fine crumbs. Mix in melted butter, cinnamon, and salt.
  3. Press the crumb mixture firmly into mini pans to form crusts and bake for 12-15 minutes until golden. Cool completely.
  4. Arrange strawberries on a baking sheet, sprinkle with sugar and drizzle with vanilla extract. Roast for 15-20 minutes until tender; cool.
  5. Fill each cooled crust with roasted strawberries and top with vanilla ice cream before serving.
