  • 5 medium red beets
  • ½ small red onion
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • 2 teaspoons orange zest
  • ½ cup fresh orange juice
  • 1 tablespoon extra-virgin olive oil
  • 1½ teaspoons ground cumin
  • 1 teaspoon kosher salt

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap each beet in tin foil and place them on a baking sheet. Roast for 40-50 minutes until tender.
  3. Allow the beets to cool, peel off the skins, and cut them into 2-inch pieces.
  4. In a large bowl, whisk together orange zest, orange juice, olive oil, cumin, and salt.
  5. Add the beets, sliced onion, mint, and cilantro to the dressing and toss gently until coated.
  6. Serve chilled or at room temperature, garnished with extra herbs if desired.
