  • ½ cup buttermilk
  • 1 tablespoon hot sauce
  • ½ cup all-purpose flour
  • ½ cup cornstarch (or more flour)

  • black pepper
  • ½ cup frying oil (or melted butter)
  • ¼ cup brown sugar
  • ½ tablespoon cayenne powder
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 tablespoon mayonnaise
  • 4 burger buns (buttered and toasted)

Instructions

  1. Slice the chicken breasts in half horizontally to create four cutlets. Season with salt and pepper.
  2. Combine buttermilk and hot sauce in one bowl; mix flour, cornstarch, and spices in another.
  3. Dredge chicken in the flour mixture, dip in buttermilk mix, then return to flour for double coating.
  4. Heat oil in a skillet to 350°F; fry cutlets for about 3 minutes on each side until golden brown.
  5. Mix hot oil with brown sugar and remaining spices; baste fried chicken.
  6. Assemble by spreading mayonnaise on toasted buns, adding fried chicken, coleslaw, and pickles.
