Ingredients

Scale
  • 3/4 cup water
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons active dry yeast
  • 1 large egg (beaten)
  • 2 tablespoons unsalted butter (softened)
  • 3 1/2 cups all-purpose flour (plus more for dusting)
  • 1/2 teaspoon kosher salt
  • Peanut or vegetable oil (for frying)
  • 1 cup powdered sugar (for topping)

Instructions

  1. Warm water and milk in a microwave-safe bowl until just above room temperature.
  2. Whisk in sugar and sprinkle yeast; let it sit for 15 minutes until foamy.
  3. Mix in beaten egg, salt, softened butter, and 2 cups of flour. Gradually add remaining flour until just combined.
  4. Transfer dough to a floured surface, gently fold it a few times, shape into a ball, and place in an oiled bowl covered with a towel.
  5. Allow dough to rise in a warm area until doubled (approximately 1.5 to 2 hours).
  6. Heat oil in a Dutch oven to 370°F while preparing the dough.
  7. Roll out the dough to a rectangle about 1/4 inch thick and cut into squares.
  8. Fry beignets until golden brown on both sides (about 2 minutes each).
  9. Drain on paper towels and dust with powdered sugar before serving.
