  • 2 cups Heavy Cream
  • 6 cups Sugar (divided)
  • 1/2 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Walnuts or Pecans (chopped)

Instructions

  1. Grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently for about 20 minutes until liquefied.
  3. In a large saucepan, combine the remaining sugar and heavy cream; simmer on low heat.
  4. Pour the melted sugar into the cream mixture while stirring continuously.
  5. Increase heat to medium until reaching soft-ball stage (244°F).
  6. Remove from heat and stir in baking soda until combined.
  7. Add unsalted butter and vanilla extract; mix until smooth.
  8. Let rest for 20 minutes before adding chopped nuts; pour into the prepared baking dish.
  9. Cool for 1-2 hours, slice into squares, and enjoy!
