  • 2 lb boneless, skinless chicken breasts
  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • 2 Tbsp fresh basil, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, garlic, Italian seasoning, Dijon mustard, salt, and pepper for the sauce.
  3. In another bowl, toss grape tomatoes with mozzarella and basil; season lightly.
  4. Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear for 1–2 minutes on each side until golden.
  5. Pour sauce over the chicken and simmer briefly while scraping up any brown bits from the pan.
  6. Top chicken with tomato mixture and bake uncovered for 18–23 minutes or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before serving.
