  3. Add diced onion and bell pepper; sauté for about 3-4 minutes until tender.
  4. Stir in the rice, black beans, and corn. Pour in 1.5 cups of water (or broth) and bring to a boil.
  5. Reduce heat to low, cover the skillet, and simmer for 15-20 minutes until rice is fully cooked.
  6. Fluff rice gently with a fork; drizzle with lime juice and garnish with cilantro before serving.
