  • 2 chicken breasts (approximately 1 lb), cut into bite-sized pieces
  • 2 scant cups long-grain white rice (Lundberg White Jasmine Rice recommended)
  • 8 cups chicken stock
  • 46 tablespoons butter or vegan butter
  • 1 heaping cup shredded or chopped carrots
  • Seasoned salt and pepper to taste
  • Dried minced onion
  • Dried minced garlic
  • Dried parsley flakes

Instructions

  1. In a large soup pot, melt 2 tablespoons of butter over medium heat. Add shredded carrots, season with salt and pepper, cover, and cook until tender (about 5-6 minutes).
  2. Stir in rice, dried minced onion, and garlic. Sauté for about 1 minute before adding dried parsley.
  3. Pour in chicken stock and bring to a boil while stirring occasionally.
  4. Reduce heat to medium-low and simmer for about 15 minutes.
  5. Season chicken pieces with salt and pepper; add them to the pot once simmering again. Cook until chicken is done and rice is al dente (7-10 minutes).
  6. Stir in remaining butter as desired; let sit for 5 minutes before serving.
