- 4–6 tablespoons butter or vegan butter
- 1 heaping cup shredded or chopped carrots
- Seasoned salt and pepper to taste
- Dried minced onion
- Dried minced garlic
- Dried parsley flakes
Instructions
- In a large soup pot, melt 2 tablespoons of butter over medium heat. Add shredded carrots, season with salt and pepper, cover, and cook until tender (about 5-6 minutes).
- Stir in rice, dried minced onion, and garlic. Sauté for about 1 minute before adding dried parsley.
- Pour in chicken stock and bring to a boil while stirring occasionally.
- Reduce heat to medium-low and simmer for about 15 minutes.
