Ingredients

  • 1 lb meatballs (beef, pork, or chicken)
  • 12 oz rigatoni or penne pasta
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add meatballs and brown on all sides. Remove from the pot and set aside.
  2. In the same pot, sauté onion, garlic, and bell pepper until softened (about 5 minutes).
  3. Stir in diced tomatoes, chicken broth, Cajun seasoning, and uncooked pasta. Bring to boil then reduce heat to low.
  4. Return meatballs to the pot. Cover and simmer until pasta is cooked through (about 10–12 minutes).
  5. Stir in heavy cream and grated Parmesan cheese until well combined. Season with salt and pepper to taste.
  6. Serve warm garnished with chopped parsley if desired.
