- 1 lb meatballs (beef, pork, or chicken)
- 12 oz rigatoni or penne pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 3 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add meatballs and brown on all sides. Remove from the pot and set aside.
- In the same pot, sauté onion, garlic, and bell pepper until softened (about 5 minutes).
- Stir in diced tomatoes, chicken broth, Cajun seasoning, and uncooked pasta. Bring to boil then reduce heat to low.
- Return meatballs to the pot. Cover and simmer until pasta is cooked through (about 10–12 minutes).
- Stir in heavy cream and grated Parmesan cheese until well combined. Season with salt and pepper to taste.
- Serve warm garnished with chopped parsley if desired.
