Ingredients
- 5 bone-in chicken thigh fillets (skin removed)
- 1 onion (chopped)
- 2 large garlic cloves (minced)
- 2 tablespoons butter (or olive oil)
- 1 ½ cups uncooked white rice
- 1 ½ cups hot chicken broth
- 1 ¼ cups hot water
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¾ teaspoon salt
- Black pepper, to taste
Instructions
- Preheat your oven to 350°F (180°C).
- In a baking dish, scatter chopped onion and minced garlic; place butter in the center. Bake for 12-15 minutes until softened.
- While baking, mix seasoning ingredients together and rub on both sides of each chicken thigh.
- Stir uncooked rice into the onion-garlic mixture after removing it from the oven.
- Place chicken thighs on top of the rice; pour hot broth and water around them.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil; optionally spray oil on chicken for a golden finish. Bake uncovered for another 20 minutes.
- Let rest for 5 minutes before serving.
