  • 5 bone-in chicken thigh fillets (skin removed)
  • 1 onion (chopped)
  • 2 large garlic cloves (minced)
  • 2 tablespoons butter
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • 1 ¼ cups hot water

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a baking dish, scatter chopped onion and minced garlic. Place butter in the center and bake for 12-15 minutes until softened.
  3. Season the chicken thighs with paprika, thyme, garlic powder, onion powder, salt, and pepper.
  4. Stir in uncooked rice into the baked onion-garlic mixture.
  5. Place seasoned chicken on top of the rice layer and pour in hot broth and water.
  6. Cover tightly with aluminum foil and bake for 30 minutes.
  7. Remove foil, spray chicken lightly with oil if desired, and bake uncovered for an additional 20 minutes until golden brown.
  8. Let rest for 5 minutes before serving; fluff rice with a fork and garnish as desired.
