  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 cup panko breadcrumbs
  • ⅔ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, mix melted butter, olive oil, and garlic powder until smooth. In another bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Butterfly the chicken breasts into cutlets for even cooking.
