  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly (or preferred flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until smooth.
  6. Scoop about 2 tablespoons of dough and flatten into discs. Place half on the prepared baking sheet.
  7. Add about 1 teaspoon of jelly in the center of each disc.
  8. Top with another disc of dough and press edges to seal.
  9. Bake for about 12-15 minutes until edges are golden brown.
  10. Let cool on the baking sheet for five minutes before transferring to a wire rack.
