  • 1 lb hot Italian sausage (or lean ground beef/turkey)
  • 1 small yellow onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 46 garlic cloves, minced
  • 1 can crushed tomatoes (28 oz)
  • 1 can fire-roasted diced tomatoes (14.5 oz)
  • 3/4 cup uncooked long-grain white rice
  • 6 cups low-sodium beef broth
  • Fresh herbs (basil, oregano, parsley)

Instructions

  1. In a large pot over medium-high heat, brown the sausage with chopped onions for about 4 minutes.
  2. Add bell peppers, garlic, and red pepper flakes; sauté for another 2–3 minutes until softened.
  3. Drain excess grease and stir in the crushed tomatoes, diced tomatoes, rice, herbs, salt, pepper, and beef broth.
  4. Bring to a boil; cover and simmer on low for 8–12 minutes until the rice is cooked through.
  5. Stir in Parmesan cheese and adjust seasoning as needed before serving hot.
