  • 4 good-sized steaks (ribeye, filet mignon, or top sirloin)
  • Kosher salt
  • 2 tablespoons olive oil
  • 3 tablespoons cracked black peppercorns
  • 1/4 cup finely chopped shallots
  • 1/4 cup cognac
  • 1 cup beef broth
  • 1/4 cup heavy cream
  • 1/4 cup chopped parsley

Instructions

  2. Heat olive oil in a cast iron skillet over high heat until smoking. Pat steaks dry and sear for about 4 minutes on each side.
