  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 8 ounces fresh mushrooms, thinly sliced
  • 1 large green bell pepper, finely chopped
  • 1 large onion, finely chopped
  • 2 teaspoons minced garlic
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup half-and-half
  • 1 cup provolone cheese, diced or shredded
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook rigatoni in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, brown ground beef with salt and pepper; remove and set aside.
  3. Sauté mushrooms, bell pepper, onion, and garlic in the same skillet until softened.
  4. Prepare cheese sauce: melt butter, whisk in flour to form a roux, then slowly add milk and half-and-half until thickened; stir in provolone until smooth.
  5. Combine pasta with half of the beef and vegetable mixture; mix well.
  6. Transfer to serving dish, top with remaining beef and vegetables, garnish with parsley, and serve warm.
