  • 4 cups cooked brown or white rice
  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • ½ yellow onion
  • ½ green bell pepper
  • ½ red bell pepper
  • 1 large garlic clove
  • 1-inch piece fresh ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 ½ cups cubed pineapple
  • ¾ cup frozen peas
  • Juice of 1 small lime

Instructions

  1. Season chicken with salt and let sit for 10 minutes.
  2. Heat 2 tablespoons of coconut oil in a large skillet over medium heat. Cook chicken until no longer pink (5-7 minutes); set aside.
  3. In the same skillet, melt remaining coconut oil and sauté onion for 3 minutes. Add bell peppers, garlic, and ginger; cook for another 2-3 minutes.
  4. Deglaze the pan with soy sauce.
  5. Stir in rice, honey, pineapple, and chicken; cook over low heat for about 5 minutes.
  6. Add frozen peas and lime juice in the last few minutes of cooking.
  7. Serve warm garnished with green onions and sesame seeds if desired.
