- 4 cups cooked brown or white rice
- 1 lb boneless, skinless chicken thighs
- 3 tablespoons coconut oil
- ½ yellow onion
- ½ green bell pepper
- ½ red bell pepper
- 1 large garlic clove
- 1-inch piece fresh ginger
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 ½ cups cubed pineapple
- ¾ cup frozen peas
- Juice of 1 small lime
Instructions
- Season chicken pieces with salt and let sit for about 10 minutes.
- In a large skillet, heat 2 tablespoons of coconut oil over medium heat. Cook the chicken until no longer pink (5-7 minutes). Remove from the pan.
- Add remaining oil to the skillet. Sauté onion for 3-4 minutes, then add bell peppers, garlic, and ginger for another 2-3 minutes.
- Deglaze the pan with soy sauce.
- Stir in cooked rice, honey, pineapple, and chicken; heat through on low for about 5 minutes.
- Finally, add peas and lime juice in the last few minutes of cooking.
