  • 1 cup Unsalted Butter, room temperature (2 sticks)
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 cup Granulated Sugar
  • 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
  • 2 1/4 cups Granulated Sugar
  • 6 Tablespoons All-Purpose Flour
  • 6 Eggs
  • 3 Lemons, Juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper.
  2. Blend raspberries with 1 tablespoon of water until smooth; strain to remove seeds.
  3. In a mixing bowl, cream together unsalted butter, flour, salt, and sugar for the crust. Press into the pan and bake for 15-20 minutes until golden.
  4. In another bowl, whisk together sugar, flour, eggs, and lemon juice. Gradually mix in raspberry puree.
  5. Pour the filling over the crust and bake for an additional 25-30 minutes until edges are set but center jiggles slightly.
  6. Cool completely before slicing into squares.
