  • 100g pretzels
  • 2 chicken breasts (500g total)
  • 35g plain flour
  • 2 eggs
  • 5 tbsp full-fat mayonnaise
  • 3 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp classic yellow mustard
  • 1 tsp apple cider vinegar
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 2 tsp paprika
  • 3/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 180ml vegetable oil (or as needed)
  • Flaky sea salt, to serve
  • Finely diced fresh chives, to serve

Instructions

  1. For the sauce, mix mayonnaise, honey, Dijon mustard, apple cider vinegar, onion powder, and garlic powder in a bowl. Adjust seasoning to taste and refrigerate.
  2. Crush pretzels using a food processor or zip-lock bag until coarse crumbs form.
  3. Set up three shallow dishes: one with flour mixed with paprika and salt, one with beaten eggs, and one with crushed pretzels mixed with spices.
  4. Slice chicken breasts into cutlets. Dredge each cutlet in flour, dip in egg, then coat thoroughly in pretzel crumbs.
  5. Heat oil in a frying pan over medium heat (180°C / 350°F). Fry cutlets for 3–4 minutes per side until golden brown. Transfer to a wire rack.
  6. Serve hot topped with flaky sea salt and fresh chives alongside honey mustard sauce.
