Ingredients
- 100g pretzels
- 2 chicken breasts (500g total)
- 35g plain flour
- 2 eggs
- 5 tbsp full-fat mayonnaise
- 3 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp classic yellow mustard
- 1 tsp apple cider vinegar
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 2 tsp paprika
- 3/4 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp oregano
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 180ml vegetable oil (or as needed)
- Flaky sea salt, to serve
- Finely diced fresh chives, to serve
Instructions
- For the sauce, mix mayonnaise, honey, Dijon mustard, apple cider vinegar, onion powder, and garlic powder in a bowl. Adjust seasoning to taste and refrigerate.
- Crush pretzels using a food processor or zip-lock bag until coarse crumbs form.
- Set up three shallow dishes: one with flour mixed with paprika and salt, one with beaten eggs, and one with crushed pretzels mixed with spices.
- Slice chicken breasts into cutlets. Dredge each cutlet in flour, dip in egg, then coat thoroughly in pretzel crumbs.
- Heat oil in a frying pan over medium heat (180°C / 350°F). Fry cutlets for 3–4 minutes per side until golden brown. Transfer to a wire rack.
- Serve hot topped with flaky sea salt and fresh chives alongside honey mustard sauce.
