- 6 Tbsp unsalted butter, melted
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar, light or dark
- 1/2 tsp pumpkin pie spice or ground cinnamon
- 1 cup confectioners' sugar
- 1/4 tsp maple extract
- 1 Tbsp maple syrup
- 1 Tbsp milk or cream
Instructions
- Preheat oven to 350°F and grease an 8-or-9" light metal loaf pan.
- In a large mixing bowl, cream together softened butter and brown sugar using an electric mixer. Add pumpkin puree and eggs, mixing well.
- Combine spices, baking soda, baking powder, salt, and flour into the mixture until just combined to avoid overmixing.
- Transfer batter to the prepared pan. For the streusel topping, mix melted butter, flour, brown sugar, and pumpkin pie spice until crumbly; sprinkle over batter.
