  • 12 oz Golden or Lemon Oreos (finely crushed)
  • 2 oz unsalted butter (melted)
  • 6 oz fresh raspberries
  • 16 oz cream cheese (softened)
  • ¾ cup granulated sugar
  • 3 large eggs
  • ⅓ cup fresh lemon juice
  • 1 cup heavy whipping cream
  • Fresh raspberries (for garnish)

Instructions

  1. Preheat oven to 350°F (180°C). Grease an 8 or 9-inch springform pan.
  2. Mix crushed Oreos with melted butter and press into the bottom of the pan. Chill.
  3. Blend raspberries and sugar until smooth; strain to remove seeds.
  4. Beat cream cheese until smooth, then gradually add sugar, incorporating eggs one at a time along with sour cream, lemon zest, and juice.
  5. Pour cheesecake batter into crust; swirl raspberry puree on top.
  6. Bake for 60-70 minutes until slightly jiggly in the center. Cool in the oven for an hour, then refrigerate overnight.
  7. Whip cream with powdered sugar; pipe around cheesecake and garnish with fresh raspberries.
