  4. Gradually add the dry mixture to the wet ingredients until just combined; the dough will be soft.
  5. Refrigerate the dough for at least 30 minutes.
  6. Scoop dough into 1-inch balls and roll in powdered sugar.
  7. Place on the prepared baking sheets with space between each ball.
  8. Bake for 10–12 minutes until set but still soft in the center. Cool on wire racks before serving.
