  • 1 cup frozen mixed vegetables (peas and carrots)
  • 2 large eggs
  • 6 tablespoons low-sodium soy sauce
  • 1 ½ teaspoons sesame oil
  • 1 tablespoon (3 teaspoons) neutral oil (like avocado or canola oil)
  • 1 tablespoon butter
  • 2 teaspoons fresh lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon neutral oil
  • 3 tablespoons butter
  • Sesame seeds (optional, for garnish)

Instructions

  1. Heat sesame oil and neutral oil in a large skillet over medium-high heat. Add chicken pieces and cook until no longer pink. Mix in soy sauce, butter, lemon juice, salt, and pepper; set aside.
  2. In the same skillet, sauté onions and frozen vegetables until translucent. Move them aside and scramble the eggs.
  3. Add cooled rice and butter; stir-fry for about 5 minutes. Incorporate soy sauce and add the chicken back in. Mix well until heated through.
  4. Serve warm, garnished with sesame seeds if desired.
