  • 2 medium red onions
  • 1 small potato
  • 1/2 cup cauliflower florets
  • 1 medium carrot
  • 56 green beans
  • Spices: cardamom, cloves, cumin seeds, cinnamon stick
  • Ghee or oil
  • Plain yogurt
  • Fresh cilantro and mint

Instructions

  1. Soak basmati rice in water for 30 minutes, then drain.
  2. In a heavy-bottomed pot, heat ghee and sauté half of the sliced onions until golden brown.
  3. Add cubed potato, cauliflower florets, carrot pieces, and green beans; cook until tender.
  4. Stir in crushed ginger, garlic, green chilies, and spices; cook until fragrant.
  5. Gently fold in the soaked rice along with biryani masala and chili powder.
  6. Pour yogurt mixed with saffron strands dissolved in warm water over the mixture.
  7. Cover and cook on low heat for about 25-30 minutes until rice is fluffy.
