- Salt and freshly ground pepper
- 1 Tbsp mustard
- 4 Tbsps vegetable oil
- 2 onions
- 1 handful of lettuce (arugula and spinach)
Instructions
- Rinse and pat dry the roast beef, then season with salt and pepper.
- In a frying pan, heat 2 tablespoons of oil over medium heat and sear the roast beef until golden brown on all sides.
- Brush the beef with mustard, place it on a rack in a roasting pan, and roast in an oven preheated to 140°C (275°F) for about 30 minutes.
- Meanwhile, slice onions into rings and sauté them in the same skillet until golden brown.
- Toast the bread slices, layer with sliced roast beef, seasoned onions, and chopped lettuce before serving.
