  • 8 slices toast
  • 600 grams roast beef
  • Salt and freshly ground pepper
  • 1 Tbsp mustard
  • 4 Tbsps vegetable oil
  • 2 onions
  • 1 handful of lettuce (arugula and spinach)

Instructions

  1. Rinse and pat dry the roast beef, then season with salt and pepper.
  2. In a frying pan, heat 2 tablespoons of oil over medium heat and sear the roast beef until golden brown on all sides.
  3. Brush the beef with mustard, place it on a rack in a roasting pan, and roast in an oven preheated to 140°C (275°F) for about 30 minutes.
  4. Meanwhile, slice onions into rings and sauté them in the same skillet until golden brown.
  5. Toast the bread slices, layer with sliced roast beef, seasoned onions, and chopped lettuce before serving.
