  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix orange zest and juice, olive oil, garlic, herbs, honey, soy sauce, salt, and pepper until combined.
  3. Pat the chicken dry and rub the marinade all over it. Marinate for at least 30 minutes or up to 4 hours in the fridge.
  4. Place the marinated chicken in a roasting pan with quartered onions and pour in chicken broth.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
