  • 1/4 cup panko breadcrumbs
  • 1 large Vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 3 cups beef stock
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives (for garnish)

Instructions

  1. In a bowl, mix ground beef with panko breadcrumbs, tomato paste, Worcestershire sauce, ground mustard, onion powder, pepper, and salt until just combined.
  2. Form the mixture into four oval patties.
  3. Heat oil in a skillet over medium heat and brown the patties on both sides; transfer them to a platter to keep warm.
  4. In the same skillet, sauté onions until translucent; then add mushrooms and cook until softened.
  5. Stir in thyme and garlic powder; sprinkle flour over the mixture and cook for an additional minute.
  6. Gradually pour in beef stock while scraping up browned bits; stir in Worcestershire sauce and bring to a boil.
  7. Return patties to the skillet and simmer in gravy until cooked through (about 5–7 minutes).
  8. Serve immediately garnished with parsley or chives.
